On beige macs, holding down the option key forces OpenFirmware to boot the
default OS (MacOS). On NewWorld Macs, holding down the option key will
present an icon for each bootable (OS 9.x and OS X) volume from which you
can choose.

To sumarize, if you are booted into either Linux or OS X and want to boot
to OS 9, hold down the option key at restart. If you have BootX installed,
you will get the chance to boot Linux.
