A)Which Linux flavour would you reccommend

YellowDog or Mandrake, both have good GUI's and GUI configuration tools. If you plan on using the command line only, the choice is more open.


B)Are there any versions that do support my hardware (I checked the Yellow Dog website and they claim the S900 'should work', the upgrade card 'might work', and the graphics card I think it said 'probably won't work'),

Yep, the upgrade card and graphics card might not work under linux. Drivers are shared by linux distributions, so one distribution isn't going to support your hardware any better than another.


C)Would you reccommend any websites or books that clearly and simply explain mac linux to a beginner

The Linux Documentation Project is a great resource, http://tldp.org/

Note you have an "Old World" Mac, which means that the boot process is much different than "New World" Macs. Some distributions no longer mention Old World support because there are fewer and fewer Old World systems, and they are so much slower than even the oldest New World machines.
