I have a full backup exported out every night. So if a drive were to fail
and I have to restore from tape then would restoring sata1 and whatever it
copied of sata2 and then running a full recovery bring me back to life?

If you want just to keep the binaries backup /sata1, if you need a real
functional database you need to shutdown the system and backup the files or
use any logical backup method specified in MaxDB itself.
