The problem with the VirtualBox image is that is needs to be created and maintained by hand. A repository to create a Docker container was made (https://github.com/mayan-edms/mayan-edms-docker) but interest has been minimal. I might try to do a Vagrant file but if someone else knows how to script the creation on an OVA file I'm would be willing to give it a try to update the VirtualBox demo image.
