Thanks, Christian: It turns put that the libfbclient.dylib file is only included in the "Classic Server" builds, not the "Super Server" build.
Upon more research, in the Super Server - /Library/Frameworks/Firebird.framework/Versions/A/Firebird is actually the same file as the libfbclient.dylib. I've been able to make a couple of quick tests with MBS SQL and connect successfully to the server.
