You may want to try M-Audio's MicroTrack 24/96.  It is inexpensive,
portable and easy to use.  If you invest in a good microphone like a
Sennheiser and windscreen, you'll obtain the quality you are looking
for.

We have been using a Marantz PMD671 with a Shure SM58 microphone and
love
it. 
The PMD671 is a bit bigger and more expensive than the PMD660. While
both
are great, I find the PMD671 has even less background noise than the
660.
