A cut-off at 20kHz before sampling is quite acceptable since:

1) speakers that go over 20kHz are quite expensive
2) Amplifiers that go over 20kHz are quite expensive
3) Ears that go over 20kHz are quite expensive.. ahum. rare..
4) We don't want our dog/cat go wild when we play music.
