If you find any documentation or guidelines to say that I'm doing something wrong then I'm happy to change this. I prefer "Me TV" but others have convinced me otherwise.

Although "Me TV" appears in the file /usr/local/share/applications/me-tv.desktop, it is the value of "GenericName" instead of "Name".
