I have been running it and made changes and installed things and now

image on the usb stick that is capable of reflashing as required and get

well, why not making the stick bootable and just doing a cp of the
entire fs?
it might require some tweaking of the selected boot device, but once the
root fs is mounted it should work.
other option: can't you just mark a checkpoint?
iirc the fs installed is btrfs, which should allow it
