First ask why you want to do major surgery to your Datto. If its a few worn bits, these can be repaired with replacements, just tell us what the problems are and I am sure there will be plenty of knowledge on how to fix it.
If you want to go down the customised route to be different, go for it! You can buy pedal boxes designed for racing car applications. These are made by Tilton and others. I am sure suppliers will be advised by others. Some of these have dual brake master cylinders and give adjustable front to rear bias. Have a look at www.bryanf.com and see what he has done. This guy has probably done everything you can. He is a Tilton advocate. You will be able to source pedal units that have suspended pedal, as per the current layout, or ones that pivot from the floor. Floor pivots may make the master cyls too low on the firewall. Master cylinders can be set up to face forward or backward in the pendant pedal types. On the heater, first you can recore the heater element for a reliable leak free heater and replace the tap using an externally fitted Bluebird tap and a longer operating cable. These taps are plastic and easily fitted in the pipeline to the heater. Next upgrade would be to install Aircon. This really get down to what fits and can be driven by the dash levers, unless you plan radical dash surgery. Yopu need to graze over some systems at a "pick a part" type wrecker to look at the options. On the Handbrake. Datsun Sunny 120Y, or most other floor mounted levers can be adapted pretty easily. Just a matter of picking up the cable at the base of the lever under the trans tunnel The steering column. You can bolt in a later model 1600 collapsing column and box. I have heard of people fitting 180B columns. 240K and 200B columns could be adapted to fit, using a late model 1600 or 120Y steering box, a bit of fiddling at the floor, and with the joint between the steering box and the base of column. Don't forget the electrics in the column will also have to be adapted.
