what would be the point of a Merbish Hackfest? to hack on documentation/bugs
or to write merb apps, find bugs and learn together?

The only hackfests I did were: Rails hackfests (patches/doc) and SDRuby
hackfest, where we all worked on a common project (apart from me who got
sidetracked and wrote googlecharts)
