I think it would be very straightforward, since good wiring and vacuum diagrams exist for all of these systems. They seem complicated at first, but they're not really when you get the bigger picture of what they are- just a box that takes electricity, and opens/closes different pneumatic solenoid valves depending on the output of temperature sensors, and the button/knob positions on the front. The Mercedes units are unnecessarily (but not impossibly) complicated by using 3 temperature sensors, and a pneumatic valve manifold that is separate from the controller unit. The three sensors should (in theory) make it work more intelligently than other cars with only a single interior temp sensor, but it doesn't in reality.

The hard part would be physically mounting the new unit in a clean and organized way that didn't mess up the look of the interior. Especially if you tried going for a Volvo or maybe a W124/W201 unit.

 Can't be any harder than (just as a random example) changing fuel
injection systems on an '80s or '90s watercooled VW, which people do
all the time.  And an awful lot of eBay Benzes with the problematic
ACC seem to have been modified with a couple of toggle switches to
control the heat and the A/C compressor---if you're going to go to the
effort of running extra wires from the engine compartment to the dash
anyway, why not do it right?
