Having lived all over the US (as I suspect Wilton has too), I learned that
the term BBQ is used to describe any locally-popular meat originally cooked
outdoors.  I still like Eastern NC vinegar-based BBQ the best but Santa
Maria BBQ (tri-tips of beef) and Texas beef BBQ are pretty tasty too.  I am
not a fan of the pork-mustard stuff.  But hey, if you are hungry enough!

Having been raised in Eastern NC (Nash County), I made what many could 
consider as "blasphemous" comment re. BBQ one Sunday at lunch in Charlotte 
several years ago.  After visiting our daughter there, SWMBO and I were 
leaving to head back East about lunch time.  Daughter invited us to go to 
lunch with her family at a restaurant near downtown on our way out of town. 
I had BBQ and enjoyed it - it was damned good - sweet sauce and all!  I've 
even been brave enough to tell my local friends about it.
