Check the oil...
This sounds like a head gasket to me, it's similar to what my '78 240D would do 
when it had gone bad.

When I went off the cruise in preps to exit, the temp climbed to almost hot. I 
shut it off to be safe. I let it sit for 15 minutes and, upon starting, was at 
the hot hash mark (not red) but, in 10 seconds, it dropped to almost normal. I 
drove the last 8 miles with it fluctuating between half and 3/4 temp. 
Came out 10 hours later to drive home and checked level...coolant in the neck 
and none in the reservoir. Placed the reservoir at correct level and drove home 
on the back roads (top speed 60, lots of speed changes, many stop signs) and 
temp never moved off of half. Checked level post CrossFit and it was in the 
neck but none in the reservoir. (Oh, and there are no leaks anywhere)  So I 
place the reservoir at the correct level and proceeded to drive it for two 
days...around town and two 25 mile trips on the freeway and temps and levels 
stayed perfect. 
I checked level last night and the levels were perfect. Drove on the freeway to 
work this morning and, when I slowed down to exit, it got hot. Shit. 
I let it cool off and drove it the last 8 miles in.  I checked level when I got 
to the parking lot, and the reservoir is FULL. Jeez. WTF.
