Hello Jerome, I have been targeting the Apollo Lake E39x0 using Yocto for OpenGL and real-time audio applications the last year (and still ongoing) and in my experience the platform is well supported by Yocto, and meta-intel.
Your goal should be achievable, i.e. I see nothing holding you back, but I have no experience with the CSI support for this platform. Make sure you are aware of the extra recipes in meta-openembedded, which is a (differently supported) add-on layer on top of meta-oe or poky/meta*. This might be needed for GStreamer, I do not know. More in general for E39x0, you might have an additional layer from your vendor (we have), that provides extra's (in our case, we used it to automate the BIOS reflash with a modified BIOS for PCIe x4, as well as automate the BIOS settings for mass production.)
