I don't know exactly why poly-dT are more used in these kind of NMR studies 
(maybe they are cheaper because they are used to do RT-PCR). However, I know I 
would not choose poly-dG. They would be likely to form G-quadruplex at high 
concentration, which would be quite different from the expected single-stranded 
DNA.
