Thanks Mathias, That was the approach I had taken but it was getting a bit out of hand (especially because the options are ordered by the time they were added so I was ending up with a huge list of options that weren't even in numerical order). I managed to solve it by adding some extra fields to the ProductVariation model. I was also pretty keen to not give the admin user the ability to add new options as some of them (framing, format) shouldn't be added to or deleted.
