Well, firstly, it's RICHTEXT_WIDGET_CLASS: http://mezzanine.jupo.org/docs/admin-customization.html#wysiwyg-editor And the docs show where it points to in the default. So to switch to CK, you should provide a class that supports the same interface, but switches in CK to do the work.
