No US vendor is yet limiting what types of apps you can get, as far as I
know.

SSH is just userspace.

"Rooted" isn't so exciting unless you plan to do some serious hacking on
it. Mine is rooted because I'm porting Kismet and doing USB host stuff,
unless you're doing that sort of thing, there's no reason to care.

You cannot, trivially, root the droid anymore unless it was already
rooted and you took precautions, the 2.1 update fixed that. There are
ways, and I could help you at a meeting, probably, though there are also
risks (you have to nuke it to factory 2.0.1 and rebuild it, or apply a
hacked partial firmware that nukes the recovery partition to factory and
subtly corrupts it so it doesn't auto-update back to secure).

You need to hack root to get ad-hoc tether mode as well. I do not
consider this a great idea, because verizon IS looking for this kind of
thing and it's pretty obvious when you're doing tethered data vs cell.

Also remember that when you root the phone and start running downloaded
root code, it could SERIOUSLY own your system and your personal data,
and you wouldn't necessarily be able to tell. Everyone seems all happy
to install any app from the store that requires root, but you have NO
IDEA what it might be doing under the covers.

tl;dr - Root shouldn't be your determining factor unless you have
specific goals
