Would a shared host provider like hostgator or webfaction work? You can ask them about the domain setup to use them just for email.

I had good experiences with google apps in the past. I think they lowered the free service to 10 users but I'm not familiar with what they provide for non profits. There is a guide at linode here (if you are using linode) http://library.linode.com/email/google-mail

In my experience Webfaction and Hostgator are pretty good at answering questions.

Rackspace email hosting can be an alternative http://www.rackspace.com/apps/email_hosting/ provides email boxes for $2/month each... That can add up if there are a lot of people in the non profit that needs email boxes...

Facts:

Ubuntu 11.10
Reverse DNS set up.
Hostname set up.
Postfix set up.
I can send an email from the server from a command line email client. Good so far.

Now I decide on server software. What say you? Dovecot <http://dovecot.org/>? Courier <http://www.courier-mta.org/>? Hormel herring <http://en.wiktionary.org/wiki/mislead>? Something else?

Note: I doubt I'll need to set up webmail. Mostly, I'll forward email to other addresses not on my server.
