You can disconnect the cable after the engine is started.

I checked the air temp sensor to ground and it is good. I also checked across
the pins on the coolant temp sensor and it is not open. I don't see any shorted
wires. I unfortunately have the Link set to not start without the keypad so
trying it with the cable disconnected at the ECU is not possible.

On the surface it would appear that the dead display and the limp-home mode
have two unrelated causes, but a bad ground can cause a multitude of symptoms.
The limp-home mode can be caused by a high coolant temp signal (a shorted wire
will do this) or a missing air temp signal (wire either shorted or open). The
display cables are known to go bad over time just because the plastic
insulation hardens and cracks, even if they are not being used. I'd suggest
disconnecting the cable from the ECU ... at the ECU end ... If one of the
display cable wires is shorted to something it also can also produce
unpredictable symptoms.

All the grounds are connected, no pinched wire. Still no text display on
the Link keypad.

Check to be sure all of the grounds got reconnected. If that's not it,
follow all of the wiring harnesses around the engine bay and look for possible
pinched wiring.

I just completed a headgasket change and coolant reroute. I now have
no display on the link pad but the buttons light up and the backlight comes on.
Also I hit what feels like the limp home mode but it varies between 3k and 4k.
I can build boost in 3rd gear up to 5psi but when I hit 4k it hits the limp
home mode.
