SS lines only a few years old.

Wheel spins fine without any rotor hanging up on the pads.

I'm leaning to a intermittent caliper, just funny how random it seems to be
and I did a few hundred miles on the track without an issue.

ABS?  Might get expensive.
Maybe sticky caliper or warped rotor.
Also, hoses have been known to go bad internally and form a sort of
check valve.  I've seen this happen where the hose looks fine
externally, but the inside collapses and holds pressure on the
caliper.
I know the backs of NAs like to get sticky parking brakes, but that is
an issue with the P brake mechanism.
