changed this ethnicity field (plus 'business activity' and 'education level')
so that the bit between the dots is shown. This isn't "exactly" the version
typed in by users but is close :( if we want that I think we need to bring over
the lookup table from mifos or maybe its a new localisation property file (can
do that by creating a new issue etc.) but anyway this part is on the sandbox
now as a stopgap.
