200+ sendmail processes? And you get 30K emails per day???
Lower your max sendmail processes to like 60 max and your mimedefang min children to 15 and the max to 61. You are just running the box out of memory I think. My 3GB system couldn't handle a 200+ sendmail load. This sounds like a DoS, misconfiguration, or something. With 60 max sendmails, I know we run stable servers that handle 150K emails a day. I think you are just spiralling the box out of memory into swap.
