Ok my guess from experience is that you may be seeing NFS timeouts and 
the box is going crazy because the processes cant write to the NFS disk 
that is mounted on the machine. In many ways you cant solve this problem 
altogether, but you can alleviate it with some changes to the mount 
options in the /etc/fstab (or heaven forbid automounter)...

This is what we use on our popservers that people imap/pop off of

nfs 
rw,fg,vers=3,rsize=8192,wsize=8192,hard,nointr,nosuid,nodev,tcp,timeo=600 
0 0
