We remember our dreams because they our internal, conscious experience. There are many levels and qualities to dreaming. For instance, we can train ourselves to better remember our dreams by keeping a dream journal next to the bed, and every time we wake up and remember a dream, write it down. This is also an insightful way to see patterns of personal symbols or problems your subconscious mind is trying to work on for you. We can also train ourselves to engage more in lucid dreaming, once we establish a better self awareness in our dream space. Even in dreamless sleep, we have a deep awareness, and once we recognize this, we may also begin to understand that is the same in our waking states. This all takes a dedication to self exploration, that simply means being aware of ourselves and how we function in life.
