I see the OpenSMTPD version number in /var/log/maillog. For example,
Jan 20 12:50:06 appserver smtpd[20401]: info: OpenSMTPD 5.4.4 starting
Jan 20 12:50:06 appserver smtpd[29018]: info: startup
