I'm sure in the world you live in, you think every desktop and server on the planet should be running OpenBSD. And that nobody should be using iOS or Android based smartphones. But as I said, you have to sometimes appreciate that reality of life exists. Sure, your dream goal of introducing the world to Jitsi is great. But, as you yourself said : "Quality takes knowledge, effort and time". That's already three big problems. Are you willing to be a volunteer on the end of the Helldesk email when people start bombarding with questions because they are unfamiliar with whatever open-source conferencing solution you have chosen ? You have carefully ignored the fourth problem: the global presence and "CDN-style" experience that the global commercial providers can offer. As the old saying goes ... sometimes better the devil you know.
