yes, if either there are bugs in software or configuration is incorrect on the mail server, or if some insecure device is attached to the network in a position where it can monitor traffic to the mail server (e.g. on a router in the path to the mailserver, or on a switch or hub in the path). There may be other ways too. You'll need to give a lot more information if you want to know more than this.
