Some A2's had leather, I know of an '86 Jetta GLi that came with a gray
leather interior. The thing about them is like you said, only the
driver's side has the height adjustment and the bottom side bolsters are
separate from the center pad. The seat bottoms look like they are 3
sectional, (separate seat bolsters and center pad), but it is one piece
of foam and one piece of leather that is wrapped around the frame and it
is tucked in at the bottom of each side bolster with a rod.

I prefer the Scirocco leather seats, because you can individually swap
worn out bottom side bolsters.
