i would reccomend against boring out a 1.8l.  in fact, i would reccomend
against any engine rebuild, unless youre going with big displacement (or
low compression for firced induction), lots of lightening, lots of
little goodies, and lots of money for the best parts.  i.e., a rebuild
that isnt near-stock.  otherwise, its just not worth it.  you'll spend
alot of money for virtually no increase in power and an insignificant
increase in reliability.  in the big picture, theres not much difference
in having your engine last 100k+ more miles or having a new engine last
400k miles.

as far as the 2.0 not revving "as easily"...  i guess thats a personal
thing.  yeah, it might get to redline faster when you rev it in neutral,
and it might sound more racey, but the 2.0 is simply more powerful.
