As for the number of teeth, the best way to verify is to just count the # of teeth on the ring, divide by the # of teeth on the pinion shaft, that will let you verify the ratio. Also keep in mind the input shaft on a 8V R&P is smaller than the input shaft on the 16V R&P, so you would have to change out the clutch disc, which would be relatively easy since you already have the transmission out. If you have plans to add a LSD, this is definitely the time to do so as well.

I've never done it myself, but the Bentley seems to cover the procedure pretty well. It's straightforward, but definitely not for the shadetree mechanic. Lots of tricky bits that need to be done right, such as preloading the diff bearings, etc. You'll need a press, a torch, and some special tools. Might as well think of a full rebuild while you're at it (new bearings, synchros, etc. -- these can be had from the dealer.) And definitely definitely _definitely_ get a bolt kit for your new diff.

I believe the highest available R&P ratio is 4.25, and it came only in the Eco-Diesels. Pretty rare. I would guess you're getting a 3.94. It would be a good idea to swap in a lower 5th gear, to keep those highway-speed rpms down.

From what I remember the GTI's and Jetta GLI/GTX came with a short ratio
steering rack.
I don't know what racks the regular Golf./Jettas came with.

I'm pretty sure that the short ratio rack is 4 1/2 turns from end to end.
