Chad,
Try timing the car with the stock chip and set the fuel mixture to stock.
Let the engine warm up and go through a few fan cycles.
Make sure that the ignition timing is set to 6deg advanced.
You'll have the drill that rivet to get at the fuel mixture.

The chip will adjust the timing advance and fuel mixture by itself.
That's probably why you're hearing the ping.
Adjust the cam timing by getting an adjustable cam sprocket.
As far as I know Garrett makes the chips for TT.  If you're still hearing
knocking then contact TT.

Last summer I was running my 2.0l 16V CIS-E Motronic at 16Deg Advanced and
pulled like a mo-fo all the way to the redline, and wanted to keep going.  I
later had to trim the timing back because of some pinging.

It's safer to run a bit rich than run too lean.
