I've used Twiki a number of times to establish system/network/software documentation and found it a perfect fit for documentation. MediaWiki was too free-form for documentation (IMHO), with concepts that it seemed users had a hard time wrapping their heads around. (I was the only real IT person, dealing with 70 or so workers in need of support information and company policies, documents and the what not.) A nice point about Twiki is that topics are stored and tracked using RCS.
