I like DokuWiki and PmWiki (for different uses) but since there are a lot of Wiki software out there, I tend refer people to the WikiMatrix: http://www.wikimatrix.org/compare/DokuWiki+MediaWiki+PmWiki+TikiWiki-CMS-Groupware Documenting is good! You can implement any of 200 solutions, but just make sure that everyone uses the same one.
