I like DokuWiki and PmWiki (for different uses) but since there are a
lot of Wiki software out there, I tend refer people to the WikiMatrix:

Documenting is good! You can implement any of 200 solutions, but just
make sure that everyone uses the same one. Having Documentation in 30
different places doesn't help at 3am :)
