If I remember right:

1) find the device,
cat /proc/partitions

2) make a mount point
mkdir /tmp/toto
* You cannot mount it in / because let's say, the partition found in 1, already contains an /etc directory. This is also the case for a live CD.

3)mount the partition found in 1 to /tmp/toto
* If there are errors, they will be displayed.
* You can also do a fsck to the partition before the mount

4) cd to /tmp/toto
ls -als . | egrep fstab

5) vi the file found in 4.

        If that were the case the system could not boot since it would
        look for
        things in /boot and /etc, not /tmp/etc...

        The remount command David gave should work, although different
        distros
        may do this differently.

        Another easy way to do it is boot from a livecd, then mount your
        /dev/sda1 (or whatever partition fstab is on) to /mnt and edit
        it from
        there.
