Sounds like you're in debian installer hell. Honestly, one of the reasons I switched back to Fedora on a couple of my boxes recently was because of issues with Ubuntu (and the installer(s), having to run ubuntu alt just to get additional options) and complex multi-disk, multi-boot + crypto partition setups.
