Are you sure this is not only a grub problem? I mean, through your
ubuntu system, can you mount/access your windows
directories/partitions?

Could you paste in here the output for a few commands?

# mount

# df -h

# fdisk -l

# cat /etc/fstab

Also, you could already check your grub configuration to check if it
wasn´t only a missconfiguration that erased or commented the lines for
your windows boot option on /etc/default/grub. Always remember to
create a backup when editing these files.
