The current workaround (which you probably already figured out) is to use the "Activate categories" function to select your multiple categories for your queued review, and then to select your single category each time you finish your scheduled queue and are presented with new cards. Cumbersome, but it works.
Looking forward to achieving this in a more automated fashion in 2.0!
