The most common use for HTML would be fonts, background colours, etc,
and 2.0 has a dialog for users to set these without having to use
HTML.

Sorry, the number of grades is here to stay. I'm pretty sure that if I
changed that, long-time users of Mnemosyne would be in uproar :-)

I don't think it's a good idea to give the average user the power to
abuse the system in this way, but this could be implemented in a
plugin.

I would create a new card then, because in essence, that's what you're
doing there.
