As Sitar melodies goes, the two undisputed heads in the field :
Ravi Shankar (appeals to the Western audiences), Vilayat Khan (traditional).

I recently picked up an excellent, two CD set, a good intro to Indian music, 
it's called "The Language of Rhythm", Drumming from North and South India, 
which I would recommend to anyone who loves their lhassi. It features Bikran 
Ghosh (tabla) and Trichy Sankaran (mrdangam, kanjira). This set also comes 
with a wonderful booklet, with a brief history of  the various Indian drums, 
as well as a guide on how to play these instruments.
