Yup... I actually just fixed the problem... It appears that I had two
rogue statements in my configuration that I had missed:
1) I had a <VirtualHost _default_:*> and a <VirtualHost _default_:443>
2) I had a <VirtualHost <IP>:80 <IP>:443>
So,
1) Separated _default_ into :80 and :443
2) Separated VirtualHost into :80 and :443
now it all works.
