Here is my two cents...

All they have to do is provide you the account login and password for
the old account.  You setup a batch file on your server with that info
and place a popdown command line for each account they have on the old
server.  As for the popdown command line instructions just go to a
command prompt and type popdown and press enter.. Or look in the modus
docs as it is fully documented.

Once you have their new Email boxes setup just schedule the batch file
to run every xx hours or xx minutes.

They will need to abandon their old account because they would interfere
with your popdown of their Email and they wouldn't be getting all their
Email as you would be moving it over to the new server.

I have done this on several domain moves and it works just fine.
