All these files were actually in the right place, and re-installing Apple's
X11 didn't help.

But I managed to solve my problem. Here's how :
I downloaded X11-XQuartz directly from the project's website ( 
http://xquartz.macosforge.org/trac/wiki/Releases
http://xquartz.macosforge.org/trac/wiki/Releases  ) and installed it.

So it seems Mono really needs a minimal version of X11 libraries. I could
have updated my system (using Leopard 10.5.2 here), which would have allowed
me to install a more up-to-date Apple X11, and it might have worked too.

PS : getting segmentation faults on MessageBoxes now, but it's another
topic. Will investigate.
