Kirby, first off, you probably American posters, because foreign posters are
usually more realistic and more accurate.
As to your question " which illustrations on film posters really get the
image of a star", where do you want to start?

Here are a few American, Marilyn Monroe posters, that did a faithful job of
her likeness: 

Gentlemen Prefer Blondes(1SH)
Bus Stop(6SH)
How to Mary a Millionaire(1SH)
River of No Return(3SH)

Then there are many hundreds of posters where the artists got the image of
the star bang on, we can't really make a list of those.
Just look at many of the posters drawn by Howard Terpening, Frank McCarthy,
Bob Peak, Drew Struzan, Richard Amsel, and others, not to mention Norman
Rockwell, Vargas etc.

Marilyn's posters - across here entire filmography - often to do not look
like Marilyn.  Very few of the illustrations get it really right.  Most of
them are Marilyn-like.  This is often the case with film posters.  The image
of Veronica Lake on THIS GUN FOR HIRE does not look like Veronica Lake.
Some Blonde is pictured.

So here's a question for the list - excepting photographs - which
illustrations on film posters really get the image of a star - doesn't
matter which one - REALLY right?

I point to the Roger Souble portrait of Veronica Lake.  There is art that
really captures the look and the essence of the star's appeal.
