To be perfectly honest there is an expectation by today's online shopper that their shopping experience will be seamless, and not laboured - it's not that you will not get any sales but there is no doubt you will lose some sales/customers if they have to pause and wait for an invoice. I can't give you a specific example of this loss but I can give you a real life case example that shows the results in a slightly different way.

A client of one of my companies sells farm fresh meat, it is sold in various sizes and packs. His first website basically took the order, the client was told (on screen) thanks for the order the company would advise them of the total price including freight and bill them by email, at which point the customer would pay and then on confirmation of the payment the order would be shipped. My company built their new site, 2-click shopping etc etc.

Within a month his sales increased by 30%.

Tom, I think you put your finger on it - the problem I am having is not being 
able to create a simple click and pay instant invoice that covers posters all 
the way up to large and expensive objects and art in far away places.
(As well as not even being able to trust the USPS plug ins to cover oversized - 
made our official complaint to the USPS Customer Affairs Dept.!)
It�s because research is now a key element to pricing and that often now needs 
to be done in communication with the buyer over a number of emails.

I am thinking at this moment - what about a catalog sales approach - all my 
items - large and small -
A customer clicks to buy and I create an invoice with custom elements where 
required for them for exactly what it will cost to ship and insure their item.
Nobody loses - customers pay their fair share.

The only problem is that it is not an instantaneous check out.
Are collectors so spoiled today they would not want the time taken to have 
their shipment fairly priced and fully insured?
Does anyone else out there have experience as a buyer or seller using the BUY 
and then INVOICE system?
And what do you pros think about this idea?
