I am a first grade teacher and have been in Kinder before. I follow the format of Lucy Calkins writer's workshop from the Units of Study in Primary Writing. I LOVE it! It is a workshop model built around writing every day and writing with choice. There is a 10-15 minute mini-lesson each day followed by around 20 minutes of writing (at least at this time of year...it grows) where they children choose what to write about and you confer with them while they are writing. They also have a choice of 2 or 3 kinds of paper for writing as well. Then at the end there is a share time where they don't just share their writing, but they share what they did well as writers that day.
As I've used this over the years, the kids LOVE writing!
