Start with Marilyn Burns. Just google her. She is the guru of math
writing, in my opinion. At the very least, have students begin by
explaining how they solved a problem. After some oral responses, have
them try writing a couple of sentences explaining their strategies. I
think it's sometimes best, with math writing, to have the math part be
something they already know how to do, since the writing part is
unfamiliar. But that doesn't mean it always has to be that way.
One way I include writing (and art) in math is by having students do
what I call Giant Story Problems. You can google that, too, and follow
the hits.
