You could divide the components of writing workshop over the week.  For 
example, you could do a mini lesson on Monday and then the kids would have 20 
minutes to write on their own projects or practice what you taught.  On 
Tuesday, they could just have 30 minutes of writing while you conference.  On 
Wednesday, you could do another mini lesson and 20 minutes of writing.  On 
Thursday and Friday you could do sharing for the week and do another mini 
lesson and quick writes.
Just some ideas.
