How about trying Reading Workshop and Writing Workshop with them. An excellent resource are books by Lucy Calkins, Leah Mermelstein, and Kathy Collins. The "Choice Literacy" newsletter is also an excellent source of info and sharing by educational colleagues. Sounds like these kids would be able to fly with some targeted modeling and mentor texts.
